Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. squash, 1/2 c. chopped onion, 3/4 c. ritz crackers, 4 tbsp. butter and 1 1/2 c. grated sharp cheddar, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook sliced squash in boiling water until fork-tender.
Drain. Add cracker crumbs to squash.
Add butter, 1 cup cheese, salt and pepper.
Beat eggs lightly with evaporated milk.
Pour into buttered casserole dish.
Sprinkle remaining cheese on top.
Bake at 425Β° for 30 to 45 minutes, until medium dry.
