Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 8 to 10 medium squash, 1 medium onion, 2 eggs, 1/2 c. milk and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook squash with small amount of water until tender.
Drain excess water; mash.
Add and beat in eggs, milk, salt, pepper, sugar and crackers.
Pour into casserole dish; dot with butter, if desired (my mother does, but I don't), and top with cheese.
Bake at 425Β° for 20 minutes or until firm and lightly browned.
