Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, 1 chopped onion, 1/4 c. butter or margarine, 2 beaten eggs and 1 can cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook squash and onion until tender.
Drain well.
Add butter and beaten eggs.
Add soup, salt and pepper.
Place in a buttered casserole and top with a thin layer of cracker crumbs.
Bake 30 minutes in a 350Β° oven.
Can add grated cheese (Cheddar or Velveeta) with the bread crumbs.
