Spoon Bread
Spoon Bread is an moderately easy dinner. Made with 1 c. corn meal, 1 c. pet milk, 1 c. water, 3 eggs, separated and 1 small can pet milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix corn meal, 1 cup milk and water in a 2-quart saucepan. Cook, stirring, constantly over medium heat until very thick. Remove from heat.
Stir in slightly beaten egg yolks, 2/3 cup milk, shortening, baking powder and salt until smooth.
Beat egg whites in small bowl until whites hold soft peaks.
Fold into corn mixture.
Pour into greased 2-quart casserole.
Bake at 325Β° for 50 to 55 minutes.
Serve immediately as potato or rice substitute.
