Spoon Bread
Spoon Bread is an moderately easy dinner. Made with 2 c. milk, 3/4 c. cornmeal, 1/2 tsp. salt, 3 to 4 egg yolks and 3 to 4 egg whites, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Scald milk in top of double boiler.
Add salt and slowly sprinkle in cornmeal, stirring constantly.
Cook until thickened, then lower heat to low and cook 5 minutes more.
Remove from heat and cool.
Beat in, one at a time, 3 to 4 egg yolks.
Beat egg whites to stiff peak.
Fold into mush mix.
Place in buttered casserole.
Bake at 350Β° for 45 minutes, until top is golden and knife blade inserted comes clean.
Serve immediately with butter and warm syrup.
