Beat egg whites and cream of tartar in a large bowl to soft peaks.
Beat at high speed in electric mixer.
Add 1/2 cup of sugar, gradually sprinkling 2 tablespoons at a time, to the egg whites and continue to beat until very stiff peaks are formed.
Do not underbeat.
