Split Pea Soup
Split Pea Soup is an moderately easy dinner. Made with 2 c. split peas, 3 qt. cold water, 1 "sweet morsel" ham (small), 1/2 c. diced celery and 1 onion, diced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash and sort peas.
Soak in cold water overnight.
Drain. Place in soup kettle with onion, celery, garlic and cold water. Cover.
Bring to boil, reduce heat and simmer about 4 hours.
When meat is tender, remove and cool.
Skim fat from soup.
Add carrots, seasonings and diced ham.
Cook until carrots are done.
If soup is too thick, thin with a little water or chicken broth.
Makes 6 to 8 servings.
