Wash and sort peas.

Soak in cold water overnight.

Drain. Place in soup kettle with onion, celery, garlic and cold water. Cover.

Bring to boil, reduce heat and simmer about 4 hours.

When meat is tender, remove and cool.

Skim fat from soup.

Add carrots, seasonings and diced ham.

Cook until carrots are done.

If soup is too thick, thin with a little water or chicken broth.

Makes 6 to 8 servings.
