Split Pea Soup
Split Pea Soup is an moderately easy dinner. Made with 1 lb. split peas, 3 qt. water, 1 medium onion, chopped, 1/2 c. diced raw carrots and 1/2 c. diced raw potatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Rinse and sort peas.
Place in large kettle with remaining ingredients.
Bring to a boil and let simmer for at least 3 hours. Season to taste.
Add more water from time to time, if necessary. Put soup through sieve, food mill or blender.
Reheat and serve.
