Split Pea Soup
Split Pea Soup is an moderately easy dinner. Made with 1 lb. dried split peas, looked and washed, 1 large onion, chopped, 3 medium carrots, chopped fine, 3 cans seasoned chicken broth and 2 to 3 celery stalks, chopped fine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Heat chicken broth until boiling; add peas and boil, uncovered, 2 minutes.
Remove from heat and cover; let stand at least 1 hour.
Warm peas and stir in remaining ingredients.
Cook over medium-high heat until tender.
Makes about 2 quarts.
