Spinach Soufflé
Spinach Soufflé is an easy dinner. Made with 2 c. (16 oz.) cottage cheese, 3 eggs, beaten, 3 (10 oz. each) pkg. frozen spinach, thawed and drained, 1 1/2 c. (6 oz.) shredded cheddar cheese, divided and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In large mixing bowl, combine cottage cheese and eggs.
Add spinach, 1/4 cup Cheddar cheese and salt.
Spoon into greased 12 x 7 1/2 x 2-inch baking pan.
Bake at 350° until set, about 45 minutes.
Remove from oven.
Sprinkle with remaining Cheddar cheese and let stand 5 minutes.
Yields 6 to 8 servings.
