Spinach Lasagna
Spinach Lasagna is an moderately easy dinner. Made with 1 lb. small curd cottage cheese, 3 c. shredded mozzarella, 1 egg, 2 (10 oz.) pkg. frozen spinach and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 350Β°.
Squeeze all water out of spinach.
In large bowl, mix cottage cheese, 2 1/2 cups Mozzarella, egg, spinach, salt, oregano, pepper and mushrooms.
In a 9 x 13 x 2-inch pan, layer 1/2 cup spaghetti sauce, 3 to 4 lasagna noodles, 1/2 cheese mixture.
Again layer 3 to 4 noodles, 1/2 cup spaghetti sauce, 1/2 cheese mixture, 3 to 4 noodles and remaining spaghetti sauce.
Top with 1/2 cup Mozzarella cheese.
Pour water/wine mixture around edges.
Cover lightly with foil.
Bake 1 hour and 15 minutes.
Cool 15 minutes before serving.
