Spinach-Cheese Casserole
Spinach-Cheese Casserole is an moderately easy dinner. Made with 2 bunches (1 1/2 to 2 lb.) spinach, stems removed, or 2 pkg. chopped frozen spinach, 2 cloves garlic, 1/4 c. butter, 6 oz. shredded cheddar cheese and 1/2 c. small curd cottage cheese, this recipe delivers authentic, satisfying flavors. Turn oven to 350Β°.
Cook spinach until limp; drain well. Transfer to large bowl.
Saute garlic in 1 tablespoon butter until light brown.
Add remaining 3 tablespoons butter.
Pour butter garlic over spinach; stir in cheese, cottage cheese, salt and pepper.
Spoon cooked rice into a 1 1/2-quart baking dish; top with spinach.
Bake, uncovered, until cheese melts.
Cover with Mozzarella slices and broil until browned.
