Spinach-Apricot Salad
Spinach-Apricot Salad is an moderately easy dinner. Made with 1 c. boiling water, 1 (6 oz.) pkg. dried apricots, 1 lb. fresh spinach, 3 tbsp. cider vinegar and 3 tbsp. apricot preserves, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Chop apricots in half.
Pour boiling water over apricots; let stand 30 minutes.
Drain.
Remove stems from spinach.
Wash, dry and tear into bite size pieces.
Combine vinegar and preserves in blender; process until smooth.
As blending, add oil through opening in lid.
Combine salad and dressing.
Serve at once. Serves 8.
