Spicy Shrimp
Spicy Shrimp is an impressive dinner. Made with 1/4 c. lime juice, 2 cloves garlic, chopped, 1 1/2 lb. medium-sized shrimp, cleaned and deveined, 1 tbsp. olive oil and 2 medium onions, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine lime juice, garlic and shrimp in large bowl. Refrigerate, covered, for 1 hour, stirring occasionally.
Heat oil in large skillet over medium heat.
Add onion, oregano, thyme and bay leaf; saute until onion is softened.
Add tomatoes and jalapeño pepper and salt.
Simmer until thickened, about 20 minutes.
Add shrimp.
Cook, covered, about 5 minutes, until shrimp are pink and curled.
Stir in parsley.
Serve over rice.
