Spicy Rice Vegetable Casserole
Spicy Rice Vegetable Casserole is an moderately easy dinner. Made with 3 tbsp. butter or olive oil, 1/2 green pepper, chopped, 1 onion, chopped, 2 cloves garlic, mashed and 1 1/2 c. rice (uncooked), this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Heat slowly together to prevent burning (stir often) the butter or oil, onion, green pepper, garlic and the rice.
Slice and stir into mixture the carrots and celery.
Season with thyme, oregano, salt and pepper.
Place vegetables and rice in a large baking dish.
Pour 3 1/2 cups boiling water over the blended mixture; stir thoroughly.
Cover; bake at 350Β° for 1 hour.
