Spicy Monterey Rice
Spicy Monterey Rice is an moderately easy dinner. Made with 2 c. water, 1 c. uncooked long grain rice, 1 tbsp. chicken flavor bouillon or 3 chicken bouillon cubes, 1 (16 oz.) carton sour cream, at room temperature and 1 1/2 c. shredded colby cheese, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In medium saucepan, combine water, rice and bouillon; bring to a boil.
Reduce heat; cover and simmer 15 minutes or until rice is tender.
In large bowl, combine all ingredients except 1/2 cup Colby cheese; mix well.
Turn into buttered 1 1/2-quart baking dish.
Bake at 350Β° for 20 to 25 minutes.
Top with remaining cheese; bake 3 to 5 minutes.
Refrigerate leftovers.
