Spicy Black Bean Rice
Spicy Black Bean Rice is an easy dinner. Made with 1 (10 oz.) can rotel (or other brand diced tomatoes and green chiles), 1 (15 oz.) can black beans, minute rice (or other instant rice), tortilla, corn chips, or tortilla chips and pepperjack cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Preheat oven to 350°.
Pour Rotel and beans into casserole dish.
Fill empty Rotel can with uncooked rice and stir into dish. Bake at 350° for about a half-hour or until rice is cooked.
Top with slices or shreds of pepperjack cheese.
Serve on tortillas, as dip with low-fat corn ships or alone as an entrée.
