Spicy Beef and Veggie Soup
Spicy Beef And Veggie Soup is an impressive dinner. Made with 2 tbsp. cooking oil, 2 lb. lean stewing beef, cut into cubes, 1 medium onion, chopped, 2 tbsp. minced garlic and 4 to 6 potatoes, cubed, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Heat oil in skillet until very hot.
Add meat cubes and brown well.
Transfer beef to crock-pot and add onion, garlic, potatoes, carrots and 1/2 bottle of each V-8 juice.
Simmer on low for 6 to 8 hours until meat is very tender.
For last 1/2 hour of cooking, turn heat to medium-high and add remaining ingredients, except cilantro.
Reserve cilantro to sprinkle on top of soup just before serving.
