Spice Cake
Spice Cake is an moderately easy dinner. Made with 6 c. butter, 6 lb. sugar, 2 doz. eggs, separated, 6 c. mashed potatoes and 3 qt. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 350Β°.
Cream butter and gradually add sugar, beating until fluffy.
Add egg yolks and beat 2 minutes.
Add potatoes and heat until smooth.
Sift dry ingredients together and add alternately with milk to potato mixture.
Blend well.
Fold in beaten egg whites.
Put in greased loaf pans, 10 1/2 x 16 1/2-inches.
Bake about 40 minutes.
Can be served warm with a dab of whipped cream or frost with your favorite icing.
Serves 100.
