Southwestern Potato Salad
Southwestern Potato Salad is an moderately easy dinner. Made with 6 c. (2 1/2 lb.) small red potatoes, quartered, 1/3 c. water, 2 oz. each: jalapeño, jack and sharp cheddar cheese, shredded, 1/2 c. ranch dressing and 1/3 c. sliced green onions, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Microwave potatoes and water in covered micro-safe bowl on High for 14 to 16 minutes.
Stir after 8 minutes.
When done, drain potatoes and set aside.
Microwave cheeses and dressing in separate bowl on High for 1 1/2 to 2 minutes, stirring after 1 minute.
Stir into potatoes.
Add onions and bacon bits, mixing lightly.
Serve warm or refrigerated.
