Southern Spoon Bread is an moderately easy dinner. Made with 1 c. yellow corn meal, 1 1/2 tsp. baking powder, 1/2 tsp. salt, 2 eggs, beaten and 3 tbsp. butter, melted, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Stir together corn meal, baking powder and salt.
In greased (1-quart size) casserole pour beaten egg and melted butter.
In medium size pan, heat milk; stir to avoid scorching.
As it starts boiling, sprinkle in the dry ingredients, stirring vigorously with wooden spoon.
Cook and stir for 2 or 3 minutes, as it thickens.
Mix with eggs in casserole.
Bake at 425Β° for 45 minutes.
