Southern Cornbread
Southern Cornbread is an moderately easy dinner. Made with 1/3 c. flour, 1 1/2 c. sifted cornmeal, 1 tsp. baking soda, 2 eggs and 1 c. buttermilk, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Preheat oven to 350Β°.
Sift the flour, cornmeal, baking soda and salt into a mixing bowl.
Beat the eggs until foamy and stir them into the dry mixture.
Stir in the buttermilk and 1 cup of the milk.
Heat the butter in a 9 x 2-inch black skillet and when it is very hot, but not brown, pour in the batter.
Carefully pour the remaining 1 cup of milk on top of the batter, without stirring.
Place the skillet in the oven and bake 50 minutes or until set and baked through.
Slice into wedges.
Serves 8.
