Southern Cornbread
Southern Cornbread is an moderately easy dinner. Made with 4 tbsp. bacon drippings, 1 1/2 c. white corn meal, 1/2 c. flour, 1 tsp. baking powder and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat oven to 425Β°.
Melt bacon drippings in a 9-inch cast-iron skillet in the oven.
Combine corn meal, flour, baking powder, salt and soda.
Whisk eggs into buttermilk; add to the corn meal mixture, stirring just until blended.
Pour hot drippings from skillet into batter; blend well.
Pour batter into hot skillet.
Bake for 20 to 25 minutes or until cornbread is golden brown.
Cut into wedges to serve.
Makes 8 servings.
