Southern Chicken Casserole
Southern Chicken Casserole is an moderately easy dinner. Made with 1 frying chicken, cut up or use favorite pieces, 1/2 lb. bacon, 1 large onion, sliced, 1 tsp. salt and 1/2 c. chopped green onions, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a skillet, fry bacon until crisp and remove.
Add chicken, browning well on all sides.
Remove to a 2-quart casserole dish as pieces brown.
Add vegetables, if desired, on top of chicken.
Cut potatoes into slices or chunks.
Add to bacon fat and brown. Remove.
Add as next layer in the casserole dish.
Top potatoes with onions.
Sprinkle with seasoning, salt, pepper, green onions and parsley.
Top with bacon.
Cover and bake at 350Β° for 45 to 50 minutes.
