South-of-the-Border Squash
South-Of-The-Border Squash is an moderately easy dinner. Made with 1 lb. yellow squash (about 4), 1 medium onion, chopped, 1/2 tsp. salt, 1/2 c. water and 1 (4 oz.) can chopped green chilies (undrained), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Squash into 1/4-inch slices.
Combine the first 4 ingredients in saucepan; cook 6 to 8 minutes or until squash is tender.
Add chilies, pimento and cheese. Spoon into a lightly greased 1 3/4 quart casserole.
Place egg slices on top and sprinkle corn chips over egg slices.
Bake at 350Β° for 20 minutes or until thoroughly heated.
