Sour Cream Potato Toss
Sour Cream Potato Toss is an moderately easy dinner. Made with 6 c. cooked, pared and diced potatoes, 3/4 c. pared, diced cucumber, 1/2 c. chopped green onion, 1 1/2 tsp. salt and 1 tsp. celery seed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine the potatoes, cucumber, onion, salt, celery seed and pepper. Sieve egg yolks; set aside.
Chop egg whites.
Add to potato mixture. Chill.
Blend together the egg yolks, sour cream, mayonnaise, vinegar and mustard. Pour over potato mixture. Toss and chill.
Makes 8 to 10 servings.
