Cut vegetables into long strips.
Saute in olive oil only until wilted; add picante sauce and saute one more minute. Set aside.
Dust filets in flour seasoned with salt and pepper.
Saute filets in olive oil over high heat.
When golden brown turn and reduce heat.
Top with vegetable mixture and sauce. Simmer, covered 10 minutes.
Serve over rice.
