Snapper Roll-Ups
Snapper Roll-Ups is an impressive dinner. Made with 6 snapper filets (about 8 oz. each), 1 tsp. salt, 1/2 tsp. cayenne, 1/2 tsp. garlic powder and 1/2 tsp. basil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 375Β°. Combine first 4 seasonings, rub fish with half of this mix.
Heat butter in large skillet over medium heat, add onions, celery and bell pepper, cooking until soft.
Add rest of seasonings and shrimp.
Cook until shrimp are pink, add bread crumbs and stir to mix.
Remove from heat and let cool.
Combine egg and parmesan, add to shrimp mixture and stir.
Transfer to a bowl, cover and chill for about 30 minutes.
Spoon equal amounts of the mixture on each filet and roll up jelly roll style, secure with a tooth pick.
Place roll-ups in shallow baking pan, sprinkle with chicken broth and bake until fish flakes easily with fork, about 15 to 20 minutes.
