Smashed Potatoes
Smashed Potatoes is an easy dinner. Made with 4 large potatoes, baked, 1/2 c. shredded cheddar cheese, 1 tbsp. butter and salt and pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
After baking, cut potatoes in half lengthwise.
Allow to cool for a few minutes.
In a medium bowl, place cheese, butter and a dash of salt and pepper.
Using a spoon, scoop out the potato half, leaving a thin layer around the inside of the skins.
Mix this with cheese mixture and fill potato skins, placing them in a dish that will keep them upright.
Return potatoes to oven for a few minutes.
Sprinkle with extra cheese, if desired.
