Skillet Hominy
Skillet Hominy is an moderately easy dinner. Made with 4 slices bacon, 1 medium onion, chopped, 1 green pepper, chopped, 1 (14 1/2 oz.) can hominy and 4 large eggs (may use egg substitute), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Fry bacon until crisp.
Drain on toweling and crumble.
Pour off all drippings except 1 tablespoon.
Add onion, green pepper and hominy.
Cook gently.
Stir often until onion is yellow.
