Skillet Cornbread
Skillet Cornbread is an moderately easy dinner. Made with 1 1/2 c. cornmeal, 2 1/2 tsp. baking powder, 2 eggs, beaten, 6 tbsp. shortening and 3/4 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine cornmeal, flour, salt and baking powder.
Combine beaten eggs and milk.
Stir into cornmeal mixture.
Mix well.
Put shortening into a 10-inch skillet and heat.
As soon as shortening is very hot, coat side of skillet with oil.
Add remaining shortening to cornbread mixture.
Spoon mixture into hot skillet and bake for about 20 minutes or until golden brown.
Yield
12 servings.
