Skillet Cake
Skillet Cake is an moderately easy dinner. Made with 1 c. brown sugar, 1 1/2 tbsp. butter, 1 pt. moist fruit, 3/4 c. sugar and 3 tbsp. butter, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a skillet, melt together brown sugar and 1 1/2 tablespoons butter, then add moist fruit (dried fruit may be used if cooked until tender).
Make a batter as follows.
Cream together sugar and 3 tablespoons butter; add egg, milk and pastry flour.
Pour this into the skillet over the melted butter and brown sugar. Bake in moderate oven.
When done, turn out on a large plate, bottom side up and your cake is already iced.
Serve hot or cold with whipped cream or plain.
