Sicilian Meat Loaf
Sicilian Meat Loaf is an moderately easy dinner. Made with 2 eggs, beaten, 3/4 c. bread crumbs, 1/2 c. tomato juice, 2 tbsp. parsley, chopped and 1/2 tsp. oregano, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Combine first 8 ingredients and stir into hamburger; mix well. On a 10 x 12-inch piece of wax paper, spread hamburger mixture. Arrange slices of ham on hamburger, leaving a 1-inch border all the way around.
Spread cheese on ham; roll and seal edges and ends. Bake, seam side down, in pan for 1 hour and 10 minutes.
Put 4 slices of Mozzarella cheese, cut in half, on loaf.
Bake for 5 minutes more at 350Β°.
