Shrimp-Tomato-Cheese Pie
Shrimp-Tomato-Cheese Pie is an impressive dinner. Made with 2 unbaked 9-inch pie shells, 3/4 c. mayonnaise, 4 oz. grated monterey jack cheese, 12 oz. grated jarlsberg cheese and 1 1/2 lb. cooked shrimp, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Beat mayonnaise, egg and egg yolks together.
Add grated cheeses, shrimp and tomatoes.
In a separate pan, saute onion and green pepper in butter.
Add salt and pepper, basil, parsley, chives and garlic.
Add sauteed vegetables to mayonnaise and egg mixture.
Mix thoroughly and pour into unbaked pie shells. Sprinkle with bread crumbs, melted butter and paprika.
Bake at 450° for 10 minutes; reduce heat to 350° and bake 40 to 45 minutes until set.
Makes 2 (9-inch) pies.
