Shrimp Quiche
Shrimp Quiche is an moderately easy dinner. Made with 1/2 lb. (2 c.) peeled shrimp, 2 tbsp. minced green onions, 1 tbsp. minced parsley, 2 tbsp. butter or margarine and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat oven to 400° (375° if using glass dish).
Saute onions and parsley in butter.
Add shrimp and seasonings; cook until shrimp turn pink.
Lightly grease 10 x 1 1/2-inch pie plate. Sprinkle cheese in plate.
Drain shrimp, reserving liquid.
Add shrimp to cheese.
Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour into plate.
Bake until knife inserted halfway between center and edge comes out clean, 35 to 40 minutes.
Let stand 5 minutes. Makes 6 large servings.
