Shrimp Pilaf
Shrimp Pilaf is an moderately easy dinner. Made with 1/2 lb. bacon, diced, 2 c. onion, chopped, 1/2 c. long grain rice, 3 c. chicken broth and 4 medium tomatoes, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In a large heavy pot over medium heat, cook bacon until crisp; remove from pan and set aside (reserving 1 tablespoon of fat).
In the same skillet, cook onion in reserved fat until tender.
Stir in rice, broth, tomatoes, lemon juice and pepper; heat to a boil. Cover; reduce heat and simmer 25 minutes or until rice is done. Stir in shrimp and bacon; cook until shrimp is done, about 5 minutes.
Makes 8 servings.
