Shrimp Gumbo
Shrimp Gumbo is an impressive dinner. Made with 5 tbsp. bacon drippings, 6 tbsp. flour, 1/2 c. onion, 1/2 c. celery and 1/2 c. bell pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Brown flour in drippings to make golden roux.
Add onion, celery, pepper and garlic until tender, but not brown.
Add tomatoes, water, okra, Tabasco, salt, Worcestershire sauce, bay leaf, pepper and shrimp.
Simmer about an hour.
Remove a little liquid and stir file into it.
Add to other.
Careful not to boil after adding file as it will become stringy.
Serve over rice.
