Shrimp Etouffee
Shrimp Etouffee is an moderately easy dinner. Made with 3 to 4 lb. large shrimp, well seasoned with salt, pepper and cayenne pepper, 1/4 c. oil, 3 large onions, 3 to 4 ribs celery and 3 cloves garlic, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Finely chop onions, celery, garlic and bell pepper; makes for a much better gravy.
Heat oil in a heavy pot (cast-iron is ideal). Fry onions until just golden brown; add next 3 vegetables and cook for about 5 to 7 minutes, then add seasoned shrimp.
Cover tightly and let simmer on a low fire for 20 minutes.
Stir well.
You may add cornstarch now to thicken gravy.
Add parsley and green onions just before serving.
Serve hot over cooked rice.
