Shoe Peg Corn Salad
Shoe Peg Corn Salad is an moderately easy dinner. Made with 1 large (16 oz.) can tiny green peas, 1 small (15 oz.) can shoe peg corn, 1 (16 oz.) can cut green beans, 1 large sweet onion (purple) and 4 stalks celery, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Drain and set aside the first 3 ingredients.
Dice and add onion and celery.
Mix together and bring to a boil the remaining ingredients.
Cool and pour over mixed vegies and refrigerate. Make at least 1 or 2 days ahead so it will marinate.
(Diamonds have "Kountry Kist" "Kitchen Cut" green beans cut on an angle that would look pretty, but any cut green beans will be fine.)
