Seven Minute Icing
Seven Minute Icing is an easy dinner. Made with 2 egg whites, 1 1/2 c. sugar, 1/4 tsp. cream of tartar or 1 tsp. light corn syrup, 1/3 c. water and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine egg whites, sugar, cream or tartar or corn syrup and water into a pot.
Cook at low heat.
Stir until well mixed.
Beat at high speed for 1 minute with an electric mixer.
Beat on low speed for 7 minutes.
Remove from heat and add vanilla; beat until it stands in peaks.
Spread on cool cake between layers and sprinkle coconut on top.
