Seasoned Eggplant
Seasoned Eggplant is an impressive dinner you can prepare in about 1 hour 4 minutes. Made with olive oil cooking spray, large eggplant, unpeeled, cubed, c. chopped onion, c. chopped bell pepper and large tomato, this recipe delivers authentic, satisfying flavors. Spray large skillet with cooking spray, heat over medium heat until hot.
Saute vegetables until crisp-tender.
Add herbs and red pepper and cook for 2 minutes.
Add broth to skillet and heat to boiling, reduce heat and simmer, covered, until vegetables are soft and most of the liquid is absorbed, for about 20 minutes.
Add salt and pepper to taste.
