Seafood Salad
Seafood Salad is an moderately easy dinner. Made with 1 c. orzo (ronzoni #47), 5 to 6 celery stalks, 1 large green and red pepper, 3 whole scallions (about) and 1 small red onion, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook Orzo.
Drain and place in large bowl.
Cut very fine the celery.
Add to bowl.
Also cut fine green or red pepper; add. Mince scallions; add.
Grate some red onion (to taste).
Mix everything together.
Add sea legs.
Sprinkle lemon juice to taste.
Mix in mayonnaise to taste.
Chill before serving.
Makes enough to serve 4 to 6 people.
