Scallop Saute
Scallop Saute is an moderately easy dinner. Made with 1 c. butter, 1 lb. fresh mushrooms, sliced, 2 medium green peppers, chopped, 5 to 8 green onions, chopped and 1 clove garlic, minced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Melt butter in large skillet.
Saute mushrooms, green peppers, onions and garlic over medium-high heat until soft.
Remove with slotted spoon.
Add scallops to skillet and saute over high heat. As scallops begin to shrink, return vegetables to skillet; salt and pepper to taste.
Stir in wine.
Serve immediately over hot rice. Serve with your best white wine.
