Scallop Salad
Scallop Salad is an moderately easy dinner. Made with 1 lb. sea scallops, 1 tbsp. fresh cilantro, minced, 1/4 c. fresh chives, chopped, 1 tbsp. grated orange rind and 1 orange, sliced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Toss scallops with 1/2 cup dressing.
Cover and refrigerate to marinate 1 hour. Spread scallops on ungreased baking sheet. Broil until almost cooked.
Remember, scallops will continue to cook after removing from broiler.
Mix remaining 1/2 cup dressing with cilantro, chives and orange rind.
Add cooked scallops with cooking liquid and toss.
Cover and refrigerate 1 hour.
Place each serving with greens and orange slices.
Top with equal portions of scallop mixture.
