Do not wash the dandelion flowers, or they will close, so it is important that they are clean when picked.
Heat the butter in a skillet.
Dip each blossom into the beaten eggs, then into flour; saute briefly in the butter.
Season with salt and pepper. Serve as a vegetable or special side dish.
