Sausage Zucchini Boats
Sausage Zucchini Boats is an moderately easy dinner. Made with 4 medium zucchini, 1 lb. pork sausage, 1/4 c. chopped onion, 1/2 c. fine cracker crumbs and 1 slightly beaten egg, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook whole zucchini in salted boiling water until tender, 7 to 10 minutes.
Cut in 1/2 lengthwise segments.
Scoop squash from shells and mash.
Cook sausage with onion.
Drain off excess fat. Stir in mashed zucchini, reserving 2 tablespoons Parmesan cheese. Add remaining ingredients.
Mix with a spoon into shells.
Place shells in a shallow baking dish.
Sprinkle with remainder of Parmesan cheese and dash of paprika.
Bake in moderate oven at 350Β° for 25 to 30 minutes.
