Sausage Minestrone Soup
Sausage Minestrone Soup is an impressive dinner. Made with 1/2 lb. bulk italian sausage, 1 c. chopped onion, 2 cloves garlic, finely chopped, 8 c. water and 1 (28 oz.) can italian-style tomatoes, undrained and broken, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a large kettle or Dutch oven, brown sausage, onion and garlic.
Pour off fat.
Add remaining ingredients except beans, spaghetti and cheese. Bring to a boil.
Reduce heat and simmer, uncovered, 1 hour. Stir in beans and spaghetti.
Bring to a boil. Reduce heat and simmer, uncovered, 10 minutes or until spaghetti and green beans are tender.
Serve with Parmesan cheese. Refrigerate leftovers.
