Sausage-Cornmeal Casserole
Sausage-Cornmeal Casserole is an moderately easy dinner. Made with 1 lb. bulk or link sausage, 1 1/2 c. milk, 1 1/2 c. boiling water, 1 tsp. salt and 1 1/2 c. yellow cornmeal, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Fry sausage over low heat and break apart with fork.
Cook from 8 to 10 minutes, until sausage is cooked and crumbled, but not browned.
While sausage cooks, measure cornmeal into large bowl.
Pour the boiling water over it and stir well.
Add drained sausage.
Beat eggs and add milk and salt.
Combine with the other mixture.
Add 2 tablespoons sausage fat and mix well.
Sprinkle baking powder over mixture and stir well.
