Sausage Casserole
Sausage Casserole is an moderately easy dinner. Made with 1 (16 oz.) can smoked sausage, 3/4 c. diced celery, 3/4 c. diced bell pepper, 1 (8 oz.) box fresh mushrooms and 1/2 c. chopped onion, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cut sausage into 1/4-inch rounds and place in bottom of large skillet or Dutch oven.
Wash and slice mushrooms and place on top of sausage.
Add celery, bell pepper and onion and saute lightly. Cut potatoes into large, diced pieces and place on top of other ingredients.
Salt and pepper to taste.
Cover and simmer until potatoes are done.
This will usually cook in its own juice from the sausage; should it need liquid, add 1/2 cup of water.
Serves 6.
