Sauerkraut Soup
Sauerkraut Soup is an moderately easy dinner. Made with 3/4 lb. lean boneless pork or beef, cut into 1/2-inch cubes, 3 c. water, 1 c. apple juice, 1 (16 oz.) can tomatoes, cut up and 1 (8 oz.) can sauerkraut, rinsed and drained, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Spray Dutch oven with nonstick coating.
Brown meat.
Stir in water, apple juice, undrained tomatoes, sauerkraut, onion, bouillon, pepper and garlic.
Bring to boil.
Reduce heat; cover and simmer 25 minutes, or until meat is tender.
Stir in apple and simmer 5 minutes more.
Yields 5 servings.
